Stollen recipe

Jean,

Not a secret, but it was never written down before I learned to make it and a big part of it is by feel. What follows is for 10-12 loaves but most years I cut it in half and make 6 loaves.

Start by making a sponge with 4 packages of dry yeast, 1 cup of warm water and 2 Tbs sugar and 2 Tbs flour. Mix and let rise about 30 minutes in a warm spot.

Add to sponge:

10 large eggs
1 cup flour
1 cup sugar
2 2# cartons of dried candied fruit
1# raisins
1/6 oz. of ground cardomom (fresh if possible)

Add to above:

1 cup scalded milk with 1# of butter melted in it.
10 cups flour (This is approximate, the consistency should be half way between a bread dough and a coffee cake dough).

Let rise to appoximately 2-3 times size (about 2-3 hours).
Knock down and divide and form loaves.
Stud loaves with blanched almond halves.
Let rise to approximately 2 times size (about 2-3 hours).
Bake at 375 degrees F for 20 -25 minutes (turn pans about halfway thru).
Brush with melted butter and sprinkle with powdered sugar while hot.

Use an all purpose flour not a cake or bread flour.

I always make these on Xmas eve day so by the time I'm thru it's time to sit and have a cocktail and usher in the holiday.

Hope i have not started a great Castara stollen war! im sure the home made version will be plenty better than the bought one ive found, but hey beggars cant be choosers, will give the recipe to my mum sure she can work her magic the wedding cake she took to de boathouse was fantastic!

got the recipe out to try... unfortunately we are soo busy in the season, I might try to do it after easter. since we never have christmas weather here anyway it does not really make a difference.... thanks anyway...

They sound awesome but to be honest I don't think you could find a diet anywhere that would include them. :lol:

Just go into any health food shop and look at the pasty-faced assistants. Don't tell me that that is living! I'd prefer a short and happy life rather than having to watch every morsel that I eat and spend an hour or two a day being a poser and "working out". :P :P :P

seefood diet is what I do. or sometimes I do the strawberry diet: I can eat everything except strawberries....

Steph - don't make me sadder than I already am. It's over 3000, not 4000.

Bill,

What you can do is send some snow over here because we could really use some. I'm so sick of this rain and there's not even a hint of winter here. I'm tired of washing my dog five times a day ... he is too! And tomorrow starts first month of winter. I'm counting days for summer to come ... in January, at least for two weeks. :wink:

the beer brewers could cope with him last time and so will they now.
he arrived late but safe and well (don't you hate people who check in their baggage and never show for the flight and it takes hours to find their suitcases back...).
I am sure this minute he is siiting at the veranda with a cup of tea, planning the daily route through castara :wink:
since one of our internetcafes is down for the time beeing (PC trouble) he might not write every day but I am sure when he writes he will tell you how much he looooves beeing here :D

count your days, guys and enjoy the fact that you have something to look forward to, that last you longer than the actual holiday... :wink:
