Carnival, Dance & Animals

This will be our third time in Tobago, staying for 3 weeks. I shall be doing a week of yoga at Kariwak and my husband does art with a local artist. This year we are bringing the family with us for a week ages 6 - 16 + parents. I have been researching things to do, with their interests in mind and have several questions.
1. Carnival - We are usually in Louisiana for Mardi Gras and I wondered if like, Louisiana, there are events leading up to Mardi Gras Day because we are flying back on Carnival Day?
2. My husband and I met through dance and look for it where ever we go but seems to be sadly lacking on Tobago?
3. Would like any feed back on Being with Horses, Adventure Farm & Nature, Genesis Nature Park.
