Here goes then. Banana stuffed pancakes with a chocolate and rum sauce.
Make or buy enough pancakes(allow 2-3 per person )
The stuffing;
1 1/2 bananas per person
1 tbs double(whipping)cream per person.
Butter
roughly chop the bananas
melt the butter,add the bananas and cream,bring to the boil to thicken
roll the mixture up in the pancakes.
The sauce
1/2 to 1 pint of Double (whipping) cream(depending on numbers)
!/2 lb dark unsweetened chocolate
2/3 oz white rum
1/2 tsp vanilla extract
4 oz castor sugar
1 tbs of butter
pinch of salt
pinch of ground cinnamon
over a medium heat reduce cream by 1/2.Use a stainless steel mixing bowl to melt the chocolate over a pan of boiling
water
Combine all the ingredients and mix vigorously with a hand whisk
If the sauce is to thick whisk in a little more cream it should be of a gentle pouring thickness.
To be honest I think that Puncheon is to bitter and "alcoholy" to be used in cooking.White Oak or any normal level white rum would do,but not Bacardi.
You could use dark rum to give an earthier flavour ,whisky for Cristmasy or an orange liqueur to give a a chocolate and orange sauce(grate a little orange zest in)
There you go then

Sorry to interupt the recipe sharing - David that sounds delicious! Also sorry for a link to the Daily Fail, but having been to Tobago and experiencing that awful national bird who would imagine the Queen would have one as decoration on her dress!

Mmmm,That sounds like a 'tryer' over the festive season.My mouth was watering as I read the recipe
and as I am on nights at the mo a microwaved spud with tinned tuna and salad for supper later is not quite doing it for me.

Paula Deen is one of the TV chefs on foodnetwork. She is famous for using plenty butter, cream and other fattening
ingredients, and she obviously eats her own food

I have a new cat - in fact I have two cats. A white lady and a black Tomcat baby. The white one I got in September the black one last month. I had a lot of work to do to bring them together without too much bood. Now the love each other and its really a big joy.
I just got the contract for a new appartement. Now I have to organize everthing for the movement in February. Time is running fast and along Christmas time is running even faster..

just the other day i saw a sticker on the wall in an electronics shop saying "If it's too loud, you are too old"
A good Stollen receipe is a treasure very well worth to pass on to the next generation. (I got one from my grandmother, too. Heavy t'ing and not good for your cholesterol level
)
If you happen to come to Tobago anytime soon, i will volunteer to test any Stollen samples offered

We have a cat here in the Marina. She appeared on the scene about a year ago as a small kitten. Everybody liked her and the manager of the restaurant started to feed her.
Well now she is the boss lady of the restaurant, gets on like a drill sergeant when dogs are around and sees about the rats at the dock at night. But the manager of the restaurant is still looking for a good place for the cat. It is not easy, because almost everybody has big dogs at home, which would eat the cat, or a husband, or a wife who doesn't like cats.
For the time being she is ok here but it is not a permanent solution.
Any ideas ?

I've been looking for a home for 2 cats for a while, but it's proving almost impossible - Tobagonians (and I guess Trinis too probably) would rather have dogs and don't seem to understand how much benefit they gain from having a cat (ie no lizards, snakes, mice, rats....!!)

Actually the cholesterol isn't that bad - off the top of my head I think the recipe calls for 1/2 lb butter, 1 cup of milk and 6 eggs. This makes 6 loaves so 1 or 2 slices doesn't have that much saturated fat. Now calories are a different story
(Of course Gisela has that pegged right - who cares about a few calories? )
We'll be in Tobago for the first eleven days of March, so who knows, maybe we can meet up.

well, busy as can be and now I got the confirmation for a treatment at a health resort for 4 weeks. They wanted me to go on December 22nd but I could move it to the 29th. But then I will be in trouble when I come back to organize the movement to the new appartement.

Sorry, having married into a German , well half German family, had to eat the stuff while still being polite ! Luckily now many years have past no need to pretend - wouldn't give it house room. The Germans do many things well but cooking aint one of 'em !

Will no longer eat cat food - placed in clean bowl he circles - tail swishes - mewing starts, takes a bite of his dry food - looks up trying to look thin - circles the meat cat food, same thing. He then goes to the door, out. A minute later back in and the same performance !! I eventually cut up prime steak/chicken whatever - cats maybe many things but stupid is not one of them !!

My apologies but was not basing my theory on one recipe ! Spent quite a lot of time in Freiburg and the Black Forest, having said that , many years ago, assume things have changed. Just to pull you into the 21st century also the UK is ranked way up there these days in terms of cuisine - patriotic or what

Anyhow, Stollen is not for everybody as we could read here but i think that is just because many people only know poor
quality products and stay away from it after a first experience.

i had cats like that. I did not allow that to happen. They got their Whiskas and FULL STOP. Except on Sundays. Sunday morning (or better all days i didn't get up by a certain hour) was fresh meat. Cat's know when it is 8 am. After that was serenade.
When they didn't like Whiskas they caught mice and birds and had those. The veterinary liked my attitude. And most of my cats got very old.
By the way ... did i tell you all that i am in Tobago since yesterday ?
